By using the best organic produce available and employing your own special process to slowly compress pulp, Substance cold-pressed juices are incredibly nutrient-dense. On top of that, Substance sources its ingredients locally and strives to reduce food waste as much as possible What drew you to create a sustainable business and how do you remain committed to those practices as the business grows with this outpost in The Market Line?

Between 33-50% of all food produced globally is never eaten, and the value of this wasted food is worth over $1 trillion. At the same time, 41 million people struggle with hunger in the United States alone including 13 million children. Those numbers affect our growth, education and opportunities right here at home in New York City each and every day. We always go back to the thought of a child not progressing in school not because he can’t keep up, but simply because he’s hungry and can’t focus. If taking a bit of extra time to prepare our offerings can make even the slightest bit of impact on reducing this global issue, we’re 100% on board for putting in that effort.

As Substance grows we’re able to utilize our ingredients in more ways and at more locations! Furthermore, it provides us opportunities to experiment with using “leftovers” like our pulp after jucing or kale stems to create soups, infusions and purees in order to make an even greater effort towards sustainable food practices.

In addition to cold-pressed juice, Substance Vitality Bar creates açai bowls, smoothies and protein bites (including vegan, gluten free and dairy free edible cookie dough, which you recently launched!). What are your best sellers? Any new delights in the works for your coming location in The Market Line?

By far our best seller is our Original Protein Brownie! We pack them with good-for-you coconut flakes, crunchy raw cacao nibs, hunger-curbing chia, hemp, ground flax and plant-based protein, and sweeten them naturally with just a touch of local honey, banana, almond butter and vanilla to create a healthy delicacy everyone can enjoy.

We’re always whipping up new and innovative creations in our Substance test kitchen! This year we’re most excited to launch some nostalgic chocolate-peanut butter combos and add pops of color to our shelves with flavor-bursting energy bites and infused waters.

When I think of the Lower East Side, I think of…

Everything happens here! We love that you have art, culture, fashion and nightlife right at your fingertips. The worst things though, you always have to have a plan before heading out, transportation, yellow cabs and never having enough time in the day.

What is your earliest food memory?

In terms of staring to create recipes, the earliest memory is attempting to make Vegan food in a microwave while living in a college dorm room. It wasn’t necessarily an ideal situation, but it’s where the Substance team learned to get creative with complex flavor profiles and to be adventurous with trying new foods and food combinations.

What’s the one food you can’t live without?

Salad! Our good stories always start with one. Ours aren’t boring though, we’ll combine anything and everything from sweet potatoes to quinoa to nuts and fruits together in a bowl to create an incredible balance of sweet, savory, salty and umami.

Preferred method of transportation:

By foot! The Substance team loves to explore new places, cities and neighborhoods while getting in a run, going for a bike ride or enjoying an afternoon stroll. Not only does this allow us to connect with the neighborhood, it enables us to discover and support local family owned businesses just like Substance Vitality Bar!
